Aero White Chocolate and Macadamia Nut Cookies

The saltiness of toasted macadamia nuts adds a nice contrast to the sweetness of the white chocolate in these all-time favourite cookies.

What you need

1/2 cup (125 ml) unsalted butter, softened
1/3 cup (75 ml) granulated sugar
1/3 cup (75 ml) packed brown sugar
1 egg
1 tsp (5 ml) vanilla
1 1/4 cups (300 ml) all-purpose flour
1/2 tsp (2 ml) baking soda
1/2 tsp (2 ml) salt
1/2 cup (125 ml) chopped toasted macadamia nuts

How to prepare


Using electric mixer, beat butter, granulated and brown sugar until light and fluffy. Beat in egg and vanilla. Stir in flour, baking soda and salt until well blended. Stir in white chocolate and nuts.

Preheat oven to 350°F (180°). Drop tablespoonfuls of dough onto parchment paper–lined baking sheets, about 2 inches (5 cm) apart. Bake on top and bottom racks, rotating and switching pans halfway through, for 9 to 11 minutes or until golden on top and lightly browned on the bottom. Let cool on rack. (Store cookies in airtight container.)
